Menu Engineering
I will take your menu and do an in-depth analysis of it's effectiveness. I will provide you with a summary presentation of how well it is working for you along with suggestions to improve the results it achieves as the profitability tool it needs to be. In order to take advantage of this service, you need to be able to provide the cost of each item on the menu and a report of how many of each item was sold during a specific span of time. The primary objective it to increase the gross profit you make per guest. This is an eye-opening and worth-while investment into your restaurant's profitability! Fee is $100 per hour with a 2 hour minimum. Fee is not inclusive of reimbursables i.e. parking.
Operations Consulting
Consulting can be tailored to suit your needs. Owners opening a new restaurant may want to engage me early on in the process. Quality decisions made in the pre-opening phase can save a lot of headaches and costly mistakes. Established restaurants may desire a fresh set of eyes to identify inefficiencies in operations or sales building opportunities that any operator in the trenches on a daily basis might miss. Consultations are offered on an hourly basis with a two hour minimum at $100 per hour. Commitment to a full 8 hour day will earn a discounted day-rate of $725. Long term projects are negotiable. Fees are not inclusive of reimbursables (i.e. parking if applicable).
Mystery Shop
This may be a bit of a lost art. So many operators rely on online reviews. I understand, it's free. I will suggest, you get what you pay for. A comprehensive summary of the experience you are providing your guest can be very beneficial. A professional restaurateur dining incognito will observe things the casual diner doesn't think to look for and a manager can miss (if for no other reason, the staff is aware, they are in the managers presence). My mystery shopping service will provide you a comprehensive summary of the hospitality product your restaurant is providing. From the initial greeting to cleanliness, timeliness, product quality and temperature (hot food hot and cold food cold), staff appearance and warmth, product knowledge, accuracy of check, a warm goodbye etc.
This is a quality investment to receive quality information.
Mystery Shop fee is $200 plus reimbursables (price paid for meal plus 20% gratuity and parking if applicable).
